Umee is a base layer blockchain that was created to seek interoperability with other blockchains and to address some of the issues that are plaguing the DeFi ecosystem. The fact that it is listed on so few exchanges is not necessarily a concern for quality but does limit the potential upside of the project. With that being stated, it is still early days. The lack of listings among exchanges is simply due to the fact that the project has not reached the popularity necessary for broader support.
